Caprese quiche
Serves 1-4
I got this recipe from a friend and I decided to double the ingredients that she gave me, plus I added a few of my own. I added chopped mushrooms and green onions to mine and as far as seasoning goes, I say use whatever flavors you like. I chose to use a Mexican seasoning because I like a little spice in my food. These are optional, but I really enjoyed the flavor. One of things I like about this recipe, is that you could eat the whole quiche for a meal or section it and add some sausage or bacon for a hearty breakfast, lunch or dinner. It also can serve as a great recovery meal after a workout.
Preheat oven to 350 F
Ingredients:
2 cups liquid egg whites
2 medium tomatoes, sliced
2 cups raw spinach, chopped
1/2 cup fresh basil, chopped
1/2 cup part skim, shredded mozarella
1/2 tsp pepper
1/2 tsp garlic powder
Directions:
Combine all ingredients except the cheese in a large bowl.
Pour mixture into a lightly greased pie plate.
Bake for 30-45 minutes until set; edges will start to pull away from the sides.
